LIVESTOCK MANAGEMENT AND WELFARE: 
Livestock must be provided access to pasture or the outdoors, facilities must be spacious and comfortable and health treatments must be in accordance with the principles of homeopathic medicine.

LIVESTOCK NUTRITION: 
The forage and feeds fed to livestock must be OGM free and come exclusively from organic farms where the use of chemical fertilizers, herbicides and pesticides is prohibited: O.G.M. free

MILK PROCESSING: 
Organic milk is processed using natural rennet and without the addition of preservatives. Processing takes place in special vats and cauldrons reserved to organic milk and kept separate from all other production processes.

TRACEABILITY AND CERTIFICATION: 
every phase of the process (livestock identification, nutrition, management, processing and trading) is designed to ensure total product traceability and certified in accordance with the regulations for the production and processing of products from organic agriculture (Reg.CEE2092/91)
