    ‘The noble wine from the hills’ .
    The species of vine Sauvignon can produce too aggressive wines due to its grassy and wild characteristic

    Here in Parma this feature is diluted into a soft tone of yellow pepper, acacia and broom. It is sparkly, of a nice transparent yellow colour, fresh and lightly parfumed

    Grapes: White Sauvignon ;

    Vinification: contact with peels, before fermentation at low temperature to take the parfume; ;

    Taking of foam: Charmat method with selected yeasts; ;

    Approaches: very good aperitif with Parmigiano-Reggiano pieces, together with soups, white meats, mountain trouts.

    Serve cool at 8-10°C
